Wagyu is widely known as the most sought-after breed of beef cattle in the world, originating in Japan. Wagyu beef is known for its extreme degree of marbling and tenderness.

 

What You’ll Get

When you purchase a whole or half carcass from Nederland Farms, pricing is based on hanging weight. The hanging weight is the weight of the carcass in pounds after the head, hide and internal organs have been removed. For most cattle, the hanging weight will be approximately 60 to 64 percent of the live animal slaughter weight.

Upon purchase, we will get you in contact with one of our preferred local butchers who will walk you through the custom cutting process to make sure you’re satisfied with the cuts you receive.

 

What’s The Deal With Wagyu?

'WAGYU' refers to a breed of Japanese beef cattle, where 'Wa' means Japanese and 'gyu' means cow. There is some evidence of genetic separation into the Wagyu genetic strain as much as 35000 years ago. Modern Wagyu cattle are the result of crossing of the native cattle in Japan with imported breeds. The unique taste and tenderness of highly marbled Wagyu beef makes for an unrivalled eating experience that is sought-after around the world. Health experts have also discovered the mono-unsaturated to saturated fat ratio is higher in Wagyu than in other beef. Wagyu is also higher than other beef breeds in a fatty acid known as conjugated linoleic acid (CLA) that is known for its many health benefits.
